Ingredients
For the Pie
- 1 baked 9-inch pie crust, cooled
- 2 pounds fresh strawberries, hulled
- 1 cup granulated sugar
- 3 tablespoons cornstarch
- 1 cup water
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract (optional)
For Serving (Optional)
- Whipped cream
Instructions
1. Prepare the Strawberries
Reserve about 1 cup of strawberries and slice the remaining berries. Arrange all the strawberries in the cooled pie crust, packing them evenly.
2. Make the Strawberry Glaze
In a medium saucepan, mash the reserved strawberries. Stir in the sugar, cornstarch, and water. Cook over medium heat, stirring constantly, until the mixture thickens and becomes glossy, about 5–7 minutes.
3. Finish the Filling
Remove the glaze from the heat and stir in the lemon juice and vanilla extract. Let it cool for about 10 minutes, stirring occasionally.
4. Assemble the Pie
Pour the warm glaze evenly over the strawberries, gently spreading it so it coats the berries and fills the gaps.
5. Chill
Refrigerate the pie for at least 4 hours, or until fully set and chilled.
6. Serve
Slice and serve topped with whipped cream and a few fresh strawberry slices.
